Maurice has been Head chef at Oriel since October 2022 and is responsible for leading the production of College’s meals, ensuring adherence to food safety regulations while maintaining the highest standards of hygiene, conducting staff training, menu planning, menu budgeting and purchasing, and liaising with other managers to ensure the smooth running of the day-to-day operation here at Oriel.
His ethos is to fundamentally use locally sourced, sustainable and seasonal ingredients of the highest standard.
